Roasted Chicken with Olives and Tomatoes



This chicken tray dish is so easy to make. You can add sliced onion as well as more vegetables if you wish; red/green/yellow peppers work really well.


Ingredients:

(2 servings)


  • 2-3 Chicken Legs, Bone in With Skin

  • 1 cup Black Olives

  • 2 cups Cherry Tomatoes

  • 3 tbsp Olive Oil

  • 3 tbsp Oregano

  • Sea Salt & Black Pepper


Method:


  • Preheat the oven to 175ºC.

  • Add the chicken, olives and tomatoes to a baking dish. Coat in olive oil and season with oregano, salt and pepper.

  • Cook until golden brown and cooked through, about 40 minutes.

  • Let cool slightly before serving.

  • Divide onto plates or into containers if on-the-go.
