Roasted Chicken with Olives and Tomatoes
This chicken tray dish is so easy to make. You can add sliced onion as well as more vegetables if you wish; red/green/yellow peppers work really well.
2-3 Chicken Legs, Bone in With Skin
1 cup Black Olives
2 cups Cherry Tomatoes
3 tbsp Olive Oil
3 tbsp Oregano
Sea Salt & Black Pepper
Preheat the oven to 175ºC.
Add the chicken, olives and tomatoes to a baking dish. Coat in olive oil and season with oregano, salt and pepper.
Cook until golden brown and cooked through, about 40 minutes.
Let cool slightly before serving.
Divide onto plates or into containers if on-the-go.
