Hummus & Veggie Wrap

This wrap couldn't be easier! Perfect for a quick lunch. If you use store bought hummus, try to make sure that the oil they have used is olive oil.


Ingredients:


  • 2 Whole Wheat Tortilla (large)

  • 1/2 cup Hummus

  • Baby Spinach / Romaine Leaves

  • 1/2 Avocado (sliced)

  • 1/2 Cucumber (sliced)

  • 1/2 Red Bell Pepper (sliced)

  • Any other vegetable you fancy!


Lay tortillas flat and spread the hummus in the center of each tortilla. Layer the spinach / romaine leaves, avocado, cucumber and bell pepper. Roll the tortilla tightly while folding the ends in.
